Microwave Sunny Citrus Pie

Ingredients

  • 2/3 cup sugar
  • 4 teaspoons Argo® Corn Starch
  • 2/3 cup milk
  • 3/4 cup (6 ounces) frozen concentrate for lemonade, thawed
  • 2 egg yolks, slightly beaten
  • 1/4 cup orange juice
  • 1 container (8 ounces) lite whipped topping, thawed, divided
  • 1 (9-inch) prepared graham cracker crust

Directions

  1. Combine sugar and corn starch in a large microwaveable bowl. Gradually stir in milk until smooth. Stir in lemonade concentrate, egg yolks and orange juice until blended.
  2. Microwave on HIGH (100%), stirring twice with a wire whisk, 5 to 7 minutes or until mixture boils; boil 1 minute. Stir until smooth. Press plastic wrap to surface of mixture. Chill 1 hour.
  3. Stir mixture until smooth; gently fold in half of the whipped topping. Pour into crust. Top pie with remaining whipped topping spreading evenly to cover filling. Chill 3 hours or until set.
