Gluten-Free Brownies

Delicious with chocolate icing or just sprinkle with powdered sugar.

Ingredients

  • 1-1/4 cups Gluten-Free Flour Mix
  • 1 teaspoon salt
  • 4 ounces unsweetened chocolate
  • 2 ounces bittersweet chocolate
  • 1 cup butter OR margarine
  • 2 cups sugar
  • 5 eggs, lightly beaten
  • 2 teaspoons pure vanilla extract
  • 1 cup chopped walnuts, optional

Directions

  1. Preheat oven to 350˚F. Line 13 x 9-inch baking pan with parchment paper or foil leaving a 1-inch overhang. Spray with baking spray and set aside.
  2. Combine flour mix and salt in a small mixing bowl, stir until evenly blended and set aside. Melt chocolate and butter; stir in 1 cup of the sugar and set aside.
  3. Combine eggs and remaining 1 cup of sugar in the bowl of a mixer with whip attachment; beat for 2 minutes on high or until eggs double in volume. Alternately stir in the chocolate and dry ingredients using low speed, then fold in vanilla.  Stir in walnuts, if desired. 
  4. Pour batter into prepared baking pan spreading into an even layer. Bake for 30 to 40 minutes or until firm in the center. Remove from oven and cool in baking pan.
  5. Cool completely before cutting. To cut, transfer from the baking pan onto a cutting board lifting with the parchment paper or foil. Slice using a sharp serrated knife. Store in an airtight container for up to one week.
