  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup butter OR margarine, softened
  • 1/2 cup sliced almonds

Filling

  • 4 egg yolks
  • 2 tablespoons Argo® Corn Starch
  • 1-1/2 cups sugar
  • 2 cups sour cream
  • 1 teaspoon ground cinnamon
  • 1/2 cup golden raisins
  • 1/2 cup raisins
  • 1/2 cup chopped dried apricots
  • 1/2 cup dried cranberries
  • 1 tablespoon finely chopped crystallized ginger
  • 1/2 teaspoon freshly grated lemon peel
  • 1 teaspoon pure vanilla extract

Directions

  1. Preheat oven to 350°F.

Combine oats, flour, brown sugar, baking soda and cinnamon in a large bowl.  Cut in butter with a pastry blender or 2 forks.  Press half of mixture into 13 x 9-inch pan.  Bake for 10 to 15 minutes until lightly browned.  Stir almonds into remaining oat mixture; set aside.

Whisk together egg yolks, corn starch, sugar, sour cream  and cinnamon  in a large sauce pan until well blended. Stir in dried fruits, ginger and lemon peel.  Bring to a boil, stirring constantly until bubbly and thickened.  Add vanilla and mix well. Pour filling over hot crust.  Crumble reserved topping over the filling.

Bake for 20 to 25 minutes until browned.  Cool.
