Orange Shortbread Cookies

Ingredients

  • 1 cup butter, softened (no substitutions)
  • 1/2 cup sugar
  • 2 teaspoons orange peel
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup Argo® Corn Starch

FROSTING (optional):

  • 1 cup powdered sugar
  • 1 to 2 tablespoons fresh orange juice
  • 1 teaspoon orange peel

Directions

  1. Preheat oven to 300ºF. Mix butter, sugar, orange peel and vanilla extract thoroughly using an electric mixer. Gradually blend in flour and corn starch.
  2. Form into 1-inch balls and place on ungreased baking sheets. Gently press down on each cookie to flatten using fingers or a flat bottomed drinking glass (dipped in sugar to prevent sticking).
  3. Bake at 300ºF for 25 to 30 minutes, or until bottoms begin to brown. Cool for 5 minutes; remove to a wire rack to cool completely. Combine powdered sugar, orange juice and orange peel and mix until frosting is smooth. Drizzle cookies with frosting.
  4. RECIPE NOTE: For a more traditional look, divide dough in half. Pat dough into an 8-inch circle on an ungreased baking sheet. Cut into 8 to 12 wedges. Repeat with remaining dough. Bake as in directions above. Remove baking sheet to a wire rack. Immediately cut into wedges again. Cool completely; ice cookies.
