Mexican Squares

A great brunch dish or a quick egg-bake for dinner.

Ingredients

  • 2 tablespoons Argo® Corn Starch
  • 1 teaspoon cilantro
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon black fine grind pepper
  • 1/4 cup butter OR margarine, melted
  • 4 eggs
  • 1 can (4 ounces) diced green chilies OR salsa verde
  • 1 cup sour cream
  • 2 cups (8 ounces) shredded Monterey Jack cheese

Directions

  1. Preheat oven to 375°F.

    Combine corn starch, cilantro, garlic salt, black pepper and butter.  Whisk in eggs, chilies, sour cream and cheese.   Pour into greased 8 x 8-inch baking dish.

    Bake for 25 to 35 minutes, until knife inserted in center comes out clean.  Serve for breakfast with corn muffins.  Or add a salad for a quick dinner.
