Cream of Broccoli Soup

Ingredients

  • 4 tablespoons butter OR margarine
  • 1 medium onion, chopped
  • 1 clove garlic, chopped
  • 2 tablespoons Argo® Corn Starch
  • 1 package (10 ounces) frozen chopped broccoli, partially thawed
  • 1 can (13-3/4 to 14-1/2 ounces) chicken broth
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  1. Melt butter in 3-quart saucepan over medium heat. Add onion and garlic; saute 5 minutes or until tender.
  2. Stir in corn starch until smooth. Add broccoli, chicken broth, milk, salt and pepper. Bring to a boil, stirring occasionally, over medium heat and boil 1 minute. Remove from heat.
  3. Carefully blend hot mixture 1/3 at a time in blender until smooth. (Blending too much hot mixture at one time can cause mixture to overflow from blender.)
