Cream of Broccoli Soup
A creamy soup that's gluten free!

Ingredients
- 4 tablespoons butter OR margarine
- 1 medium onion, chopped
- 1 clove garlic, chopped
- 2 tablespoons Argo® Corn Starch
- 1 package (10 ounces) frozen chopped broccoli, partially thawed
- 1 can (13-3/4 to 14-1/2 ounces) chicken broth
- 1 cup milk
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Directions
- Melt butter in 3-quart saucepan over medium heat. Add onion and garlic; saute 5 minutes or until tender.
- Stir in corn starch until smooth. Add broccoli, chicken broth, milk, salt and pepper. Bring to a boil, stirring occasionally, over medium heat and boil 1 minute. Remove from heat.
- Carefully blend hot mixture 1/3 at a time in blender until smooth. (Blending too much hot mixture at one time can cause mixture to overflow from blender.)
