Mango Macadamia Nut Muffins

Cook Time:  15 to 20 minutes
Yield:  12 muffins

  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 3/4 cup packed light brown sugar
  • 1/2 cup chopped, unsalted macadamia nuts (about 2.25 ounces)
  • 2 teaspoons Argo® Baking Powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Spice Islands® Ground Saigon Cinnamon
  • 1/4 teaspoon salt
  • 1 large ripe mango, peeled and seed removed
  • 1/4 cup Mazola® Corn Oil
  • 1 large egg, beaten
  • 1 teaspoon Spice Islands® Pure Vanilla Extract
  • 1/2 teaspoon grated orange peel
  • Mazola Pure® Cooking Spray
  1. Preheat oven to 400°F. Spray a 12-hole muffin pan with cooking spray.


  2. Stir together flour, oats, brown sugar, macadamia nuts, baking powder, baking soda, cinnamon and salt in a large bowl.


  3. Puree mango in a blender until smooth. Add oil, egg, vanilla and orange peel and blend. Add mango mixture to dry ingredients and stir just until moistened.


  4. Spoon evenly into prepared muffin cups. Bake for 15 to 20 minutes, or until toothpick inserted in center comes out clean.


  5. Cool 5 minutes; remove from pan and serve warm.
