Peach Muffins

Perfect in the summer when peaches are at their best.

Ingredients

  • 1-1/2 cups all-purpose flour
  • 1-1/4 teaspoons ground cinnamon
  • 1 teaspoon Argo® Baking Powder
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup butter, melted
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1 egg
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup buttermilk
  • 2 cups diced fresh peaches

Directions

  1. Preheat oven to 400°F. 

    Combine flour, cinnamon, baking powder, ginger, baking soda and salt in a large bowl.  Mix butter, brown sugar and sugar in a medium size bowl until well blended. Add egg and vanilla extract.  Stir in buttermilk and peaches.

    Add peach mixture to bowl with flour, stirring just until combined.  Fill 2-1/2-inch greased or paper lined muffin cups 2/3 full.  Bake for 15 to 18 minutes until muffins are browned and wooden pick inserted in center comes out clean.
