Easy Blueberry Cobbler

Ingredients

FILLING:

  • 4 cups fresh OR frozen blueberries
  • 2/3 cup sugar
  • 2 tablespoons Argo® Corn Starch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1/4 teaspoon almond extract
  • 1/8 teaspoon ground cloves

BISCUIT TOPPING:

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon Argo® Baking Powder
  • 1/2 teaspoon salt
  • 1/4 cup butter OR margarine, melted
  • 1/2 cup milk
  • 1 to 2 tablespoons coarse (turbinado) sugar, optional

Directions

  1. Preheat oven to 400°F.
  2. For Filling: Mix berries, sugar and corn starch in a large bowl. Add water, lemon juice, almond extract and cloves, if desired. Pour mixture into a greased 8-inch square baking dish.
  3. Bake 10 minutes, stirring once. While filling bakes, prepare Biscuit Topping.
  4. For Biscuit Topping: Combine flour, sugar, baking powder and salt in a small bowl. Stir in butter and milk with a fork until soft dough forms. (Do not overmix.) Drop spoonfuls of topping onto hot fruit. Sprinkle coarse sugar over topping, if desired.
  5. Return cobbler to oven; bake 25 to 30 minutes or until fruit is bubbly and topping is golden brown. Cool at least 30 minutes to allow fruit to thicken. Serve warm with ice cream, if desired.
