Asparagus with Cheese Sauce

A quick 30-minute marinade adds great Asian flavors to chicken breasts, pork tenderloin, steaks, shrimp or tuna steaks.

Ingredients

  • As needed cooking spray
  • 16 fresh medium asparagus spears, trimmed (about 8 ounces)
  • 1 medium garlic clove, minced
  • 1/2 cup skim milk
  • 2 teaspoons Argo® Corn Starch
  • 1/4 cup reduced-fat shredded Cheddar and Mozzarella cheese blend
  • 1 teaspoon lemon juice
  • Pinch cayenne pepper
  • 1 tablespoon chopped fresh herbs, such as dill weed OR chives

Directions

  1. Generously spray a large non-stick skillet with cooking spray. Heat over medium heat. Cook the asparagus and garlic for 2 to 3 minutes, or until the asparagus is tender-crisp. If needed, add 1 to 2 tablespoons water to prevent burning. Remove from the heat. Cover to keep warm.
  2. Whisk together milk and corn starch in a small saucepan. Bring to a boil over medium-high heat, stirring occasionally. Cook for 1 minute, or until thickened, stirring occasionally. Reduce heat to low.
  3. Stir in cheese, lemon juice and cayenne. Cook for 1 to 2 mintues, or until the cheese is melted.
  4. To serve, arrange asparagus on a platter. Pour cheese sauce over asparagus. Sprinkle with herbs.
